Ingredients
Scale
- 1 lb ground beef (or turkey, chicken, or beef bacon for a halal version): The base of your taco filling. Ground beef is juicy and flavorful, but feel free to substitute it for another protein of your choice, like turkey or even vegetarian options like black beans or lentils.
- 1 packet taco seasoning (or homemade taco seasoning): This gives your filling that bold, zesty taco flavor. You can use store-bought seasoning or create your own with chili powder, cumin, paprika, garlic powder, and onion powder.
- 8 large flour tortillas (or corn tortillas for gluten-free): The perfect vehicle for all those cheesy fillings. Flour tortillas are soft and pliable, but you can also use corn tortillas for a different texture or to make the recipe gluten-free.
- 1 ½ cups shredded cheese (cheddar, mozzarella, or a blend of both): The melty cheese is what holds these roll-ups together and adds that gooey deliciousness.
- ½ cup cream cheese (optional, but recommended for extra creaminess): This helps make the filling even creamier and more indulgent. It adds a smooth texture that complements the taco filling beautifully.
- 1 small onion, finely chopped: Adds flavor and sweetness to the beef mixture.
- 1 bell pepper, chopped: A little crunch and sweetness for balance.
- 2 tbsp sour cream: For a bit of tang, which cuts through the richness of the cheese and beef.
- 1 cup shredded lettuce: For crunch and freshness.
- Fresh salsa or guacamole: For serving on the side, to add a little extra flavor and color to the meal.
- Optional toppings: Chopped cilantro, sliced jalapeños, or diced tomatoes.
Instructions
Step 1: Brown the Ground Beef
- Heat a large skillet over medium-high heat. Add the ground beef (or preferred protein) and cook, breaking it up with a spatula as it cooks. Cook until the beef is browned and fully cooked through, about 5-7 minutes.
- Once the beef is cooked, drain any excess fat (if needed). This is especially important if you’re using beef, but less necessary for leaner meats like turkey.
- Stir in the taco seasoning and water (follow the instructions on the seasoning packet, or use 1-2 teaspoons of your homemade seasoning blend with ½ cup water). Let it simmer for a few minutes until the sauce thickens slightly.
Step 2: Prepare the Cheese Mixture
- While the beef is cooking, grab a mixing bowl and combine the shredded cheese, cream cheese, and sour cream. Stir until everything is well combined and smooth. The cream cheese will add an extra layer of creaminess to the filling.
Step 3: Assemble the Roll-Ups
- Lay a tortilla flat on a clean surface. Spread a generous spoonful of the cheese mixture evenly across the tortilla.
- Top with a few spoonfuls of the taco beef mixture, then add a sprinkle of chopped bell peppers, onions, and any other veggies you’d like. Leave a small border around the edges so everything stays inside when you roll it up.
- Carefully roll up the tortilla, tucking in the sides as you go, to create a tight log. Repeat this process for the remaining tortillas.
Step 4: Bake the Roll-Ups
- Preheat your oven to 375°F (190°C).
- Place the roll-ups seam-side down on a baking sheet lined with parchment paper or lightly greased. This ensures the cheese won’t stick to the pan, and it helps them crisp up perfectly.
- Bake for 15-20 minutes, or until the tortillas are golden brown and crispy on the outside, and the cheese is melted inside.
Step 5: Serve and Enjoy!
- Remove the roll-ups from the oven and let them cool for a few minutes before slicing them into bite-sized pieces.
- Serve with your favorite salsa, guacamole, or a dollop of sour cream on the side for dipping. You can also sprinkle them with fresh cilantro, chopped tomatoes, or jalapeños for an extra burst of flavor.
