Ingredients
Scale
Before we get started, here’s everything you’ll need to make this flavorful Crack Chicken Chili:
- 1 lb chicken breast (cubed)
- 1 package (8 oz) cream cheese (softened)
- 1 packet ranch seasoning (or 1/4 cup homemade ranch seasoning)
- 1 can (15 oz) diced tomatoes (drained)
- 1 can (15 oz) white beans (drained and rinsed)
- 1 can (15 oz) corn kernels (drained)
- 4 slices turkey bacon (or beef bacon for a halal version, chopped)
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Shredded cheddar cheese (for garnish)
- Sour cream (for garnish)
- Chopped green onions (for garnish)
Instructions
- Cook the Bacon:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside on a plate lined with paper towels. This step adds a crispy, savory element to the chili that gives it so much flavor.
- Cook the Chicken:
- In the same pot, add the cubed chicken breast. Cook for about 6-8 minutes, or until the chicken is cooked through. You may want to season the chicken with a bit of salt and pepper for extra flavor. The browned bits at the bottom of the pot are packed with flavor, so make sure to scrape those up as you stir.
- Add the Cream Cheese and Ranch Seasoning:
- Lower the heat to medium-low. Add the softened cream cheese to the pot and stir until it melts and combines with the chicken. Add the ranch seasoning and stir well. The cream cheese will make the chili ultra-creamy, while the ranch seasoning adds that signature flavor that will make you crave more.
- Add the Remaining Ingredients:
- Stir in the diced tomatoes, beans, corn, garlic powder, onion powder, chili powder, and chicken broth. Bring the mixture to a gentle simmer. Let it cook for about 15-20 minutes, stirring occasionally, until everything is heated through and the flavors have melded together.
- Add the Bacon:
- Stir in the crispy bacon you set aside earlier. This adds that wonderful, smoky crunch that balances the creamy texture of the chili.
- Taste and Adjust:
- Give the chili a taste and adjust the seasoning if needed. You may want to add a little more salt, pepper, or chili powder depending on your preferences.
